Ingredients:
- 1 large head of cauliflower, cut into florets (about 800 grams or 1.8 pounds)
- 250 grams (1 cup) cream cheese, softened
- 200 grams (2 cups) shredded mozzarella cheese
- 100 grams (1 cup) grated Parmesan cheese
- 150 grams (1 cup) sour cream
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 200°C (400°F) and lightly grease a baking dish.
In a large pot of salted boiling water, cook the cauliflower florets for about 5 minutes, or until they are crisp-tender. Drain well and set aside.
In a mixing bowl, combine the softened cream cheese, half of the shredded mozzarella cheese, half of the grated Parmesan cheese, sour cream, minced garlic, dried thyme, dried oregano, salt, and black pepper. Stir until well combined.
Add the cooked cauliflower florets to the bowl and gently toss to coat them evenly with the cheese mixture.
Transfer the cauliflower mixture to the greased baking dish and spread it out in an even layer.
Sprinkle the remaining shredded mozzarella and grated Parmesan cheeses over the top of the cauliflower.
Bake in the preheated oven for about 25-30 minutes, or until the cheese is golden and bubbly.
Once done, remove the casserole from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley.
