Keto Savoury Muffins

Servings: Makes 12 muffins

Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 4 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1/4 cup unsweetened almond milk (or any low-carb milk of choice)
  • 1 cup grated cheddar cheese (or your preferred cheese)
  • 1/2 cup diced and cooked red onion
  • Optional:  Spinach or chopped fresh herbs (such as parsley or chives) for garnish

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners or grease the cups with cooking spray.

  2. In a mixing bowl, whisk together the almond flour (or coconut flour), coconut flour (or almond flour), baking powder, baking soda, salt, and garlic powder.

  3. In a separate bowl, beat the eggs. Add the melted butter or coconut oil and almond milk, and whisk until well combined.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

  5. Fold in the grated cheddar cheese and diced cooked red onion. The mixture should be thick but still spoonable.

  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.

  7. If desired, sprinkle the tops of the muffins with chopped fresh herbs for added flavor and visual appeal.

  8. Bake in the preheated oven for approximately 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  9. Remove the muffins from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
